Serves 2 to 3
- 1 can of chickpeas (garbanzo beans), drained and rinsed
- 1 tablespoon of relish
- 1 stalk of celery chopped
- 2 tablespoons of vegan mayonnaise
- 1 tablespoon of dijon mustard
- 2 tablespoons of red onion
- ½ tablespoon of apple cider vinegar
Instructions
- Mash chickpeas in a bowl with a potato masher or a fork.
- Add relish, celery, mayo, mustard, onion, and apple cider vinegar and mix.
- Serve with whole-grain toast, lettuce, and tomato.
