Serves 2 to 3

  • 1 can of chickpeas (garbanzo beans), drained and rinsed
  • 1 tablespoon of relish
  • 1 stalk of celery chopped
  • 2 tablespoons of vegan mayonnaise
  • 1 tablespoon of dijon mustard
  • 2 tablespoons of red onion
  • ½ tablespoon of apple cider vinegar

Instructions

  1. Mash chickpeas in a bowl with a potato masher or a fork.
  1. Add relish, celery, mayo, mustard, onion, and apple cider vinegar and mix.
  1. Serve with whole-grain toast, lettuce, and tomato.
